     Chicken Salad

Ingredients
2lb chicken breast
3tbs lemon juice
1tbs olive oil
2 cloves garlic, finely chopped
1/4tsp cumin
1/2tsp black pepper
1/8tsp cayenne
4 loaves pita bread
1 onion, sliced
 
1 tomato, sliced
1 cucumber, sliced thin
hummus, tahini sauce, mayonnaise, or garlic yogurt sauce

Instructions
In a medium bowl, combine chicken, lemon, oil, garlic, cumin, pepper, and cayenne and let marinate at least 2 hours. Remove chicken from marinade and slice about 1/4-1/2in thick.
Pour 3-4 tbs of olive oil into medium frying pan. Heat to a medium high and add chicken. Cook chicken for about 8 min, stirring occasionally for even cooking.
Heat pita loaves in oven or microwave. Stuff pita with chicken and veggies.
