1c dry white wine (can sub with apple brandy or cider)
2 medium sized apples, peeled, cored, and sliced
Instructions
Preheat oven to 400 degrees. Make deep slits all
over the tenderloin and insert the garlic slivers.
Season with salt, pepper, cumin. Heat the oil in
skillet and sear the tenderloin well on all sides -
about 10 min.
Remove the tenderloins from the skillet (keep the
juices in the skillet) and place in a roasting pan.
Add the broth and white wine to the pan and cook in
the over at 40 for 10 min.
Cook apple slices in same skillet. Saute until
soft. Remove apples from pan, set aside, and save
pan juices again.
Remove tenderloins from oven, cover with aluminum
foil and let sit for 10 min. Pour the roasting
juices into skillet and boil everything on high
for 5 minutes, until you get gravy consistency of
melted ice cream. Slice tenderloins, add sliced
apples, and drizzle gravy.
