     Macaroni & Cheese

Ingredients
1 lb. Macaroni (Elbow or Twists)
4 tbsp. Butter
1/2 cup Flour
2 tsp. Salt
1 tsp. Dry Mustard
1/2 tsp. Pepper
5 cups Milk
5 cups shredded Cheddar Cheese
1/2 cup Breadcrumbs
 
Optional -- Substitute 1 cup Gruyere Cheese for 1 cup Cheddar Cheese

Instructions
Boil pasta half the time as noted on the box. Drain and place in a casserole pan, coated with non-stick spray. Preheat oven to 375 degrees.
While pasta is cooking, in a separate saucepan, melt butter on medium heat. Once melted, add flour, mustard, pepper & salt. Stir until a paste. Slowly stir in milk, stirring constantly over medium heat.
Continue stirring until thick, approximately 10 minutes. Remove from heat and stir in 4 1/2 cups cheese, stirring until melted. Pour cheese mixture into casserole, mixing throughout macaroni thoroughly.
In a separate bowl mix breadcrumbs and remaining 1/2 cup of cheese. Spread evenly over the top of the macaroni and cheese. Bake in the oven for 25 minutes. Let sit at least 5 minutes after removing from the oven before serving.
