3 tablespoons of butter or margarine

1/4 cup of flour
|

4 cups of milk
|

2 cups of peeled, diced potatoes
|

1/2 cup of minced onion
|
|
1/2 teaspoon of salt
|

1/2 teaspoon of freshly ground pepper
|

grated cheese, crumbled bacon, chopped green onion or chives
|

Instructions |
|
|
In a saucepan, over low heat, melt the butter
Stir in the flour, stir until smooth, then cook 1 minute,
constantly stirring
|
|
|
Gradually add the milk
Stir in the potatoes, onion, salt, and pepper
|
|
|
Cook over medium heat, stirring frequently until mixture is
thickened and potatoes are done, about 15 to 20 minutes
|
|
|
For extra jazz, top with your favorite baked potato toppings-
grated cheese, crumbled bacon, chopped green onion or
chives
|
