     Thai Green Curry

Ingredients
1 tbsp. green curry paste
2 tins bamboo shoots
1 bundle asparagus, sliced in half along the length
2 handfuls green beans topped and tailed
1 onion finely chopped
1 small head broccoli, cut into small pieces
Prawns. Enough for 4. Raw is best , cooked will do.
1 can coconut low-fat coconut milk
White wine, about 6 ors
 

Instructions
In a large wok, partially fry the onion, then add the bamboo, green beans, asparagus and green curry paste. Combine well before adding 3/4 of the coconut milk and wine. Bring to a boil and simmer gently for 5 minutes. Add the broccoli and continue to simmer until all vegetables are cooked but not mushy. Add the prawns , the rest of the coconut milk and wine and cook through- about 4 minutes.
Serve with basmati rice, popadums, mango chutney and naan bread.
