     Boston Brown Bread

Ingredients
1 cup cornmeal
1/2 cup white flour
1 cup graham flour
1 1/2 tsp. baking soda
1 tsp salt
3/4 black molasses
2 cups buttermilk
 

Instructions
Mix in a bowl and steam for 2 hours.
This is the original recipe and the term graham flour is not really defined. The best I could determine is it was coarse grind wheat flour. I substitute this with 3/4 cup oat bran and an additional 1/4 cup white flour to get the same consistency.
To steam, I use a stainless steel bowl with about 30% room for expansion.. Cover with plastic wrap and place in a larger port with water. Check frequently.
Doug's baked beans and Boston Brown bread have become a firm favourite at many of our winter gatherings. This bread is just the right amount of sweet, and adds a beautiful colour and texture to the meal.
