     Baked Beans

Ingredients
3 cups white Navy beans
7.5 cups water- i.e. 2.5 times the amount of beans
or
1 lb soldier beans and
8 cups of water
1 medium sized onion chopped
2 tbsp dry mustard--don't be shy
1/3 cup black molasses
 
1/2 cup brown or Demerara sugar
5 oz small tin tomato paste

Instructions
Beans-navy or soldier Soak beans in water overnight-the soak water is used for cooking so the original measurement should be accurate. Next day- bring beans to a boil and skim the foam off the surface Add beans and remaining water to the bean pot.
I like to add a ham hock trimmed of all fat , or lean bacon. Take the hock out after 4 hours, remove any ham and return it to the pot.
Bake for 6 hours at 250F
If also baking a ham -- a 12-14 pound bone-in ham will cook in the same time.
Serving Suggestions
Great with Ham and /or Boston Brown Bread. So much better than out of a can.
