Beans-navy or soldier
Soak beans in water overnight-the soak water is used for cooking
so the original measurement should be accurate.
Next day- bring beans to a boil and skim the foam off the surface
Add beans and remaining water to the bean pot.

I like to add a ham hock trimmed of all fat , or lean bacon. Take the
hock out after 4 hours, remove any ham and return it to the pot.

|
Bake for 6 hours at 250F
|
|
|
If also baking a ham -- a 12-14 pound bone-in ham will cook in
the same time.
