     Mashed Cauliflower

Ingredients
8 c. bite size cauliflower florets (about 1 head)
4 cloves garlic, peeled and crushed
1/3 c. nonfat buttermilk
4 tsp EVOO
1 tsp butter
1 tsp salt
fresh ground black pepper
snipped chives for garnish
 

Instructions
Place cauliflower florets and garlic in steamer basket over boiling water, cover and steam until very tender, 12 to 15 minutes
Place the cooked cauliflower and garlic in a food processor. Add buttermilk, 2 tsp oil, butter, salt and pepper; pulse several times, then process until smooth and creamy.
Transfer to serving bowl. Drizzle with remaining 2 tsp oil and garnish with chives.
Serving Suggestions
4 servings, 3/4 cup each; 107 calories; 7g fat; 5g protein.
