     Key Lime Pie

Ingredients
1 (8 oz) can of sweetened condensed milk
4 egg yolks (reserve the whites)
1/2 cup of key lime juice (not lime juice)
6 tablespoons of sugar
9 in. baked pie shell (pastry crust or graham cracker crust)
1/2 teaspoon cream of tartar
 

Instructions
Preheat oven to 340 degrees F Beat sweetened condensed milk, yolks, and key lime juice until frothy. In a separate bowl, with a clean mixer, beat 1 egg white until stiff.
Carefully fold beaten egg white into lime juice mixture. Pour mixture carefully into pie shell. Beat 3 other egg whites on high speed.
Gradually add sugar and cream of tartar. Spread meringue atop pie, swirling to make soft peaks.
Bake for 10- 20 minutes, until meringue is golden brown. Cool one hour on a wire rack, then chill to set completely.
