     Pumpkin Protein Waffles

Ingredients
1 Cup whole uncooked oatmeal
1/2 Cup wheat flour
1/2 Cup white flour
1/4 Cup corn meal
1/2 Cup chopped pecans
2 Tbsp Splenda
1/2 tsp baking powder
2 1/2 tsp pumpkin pie spice
2 eggs
 
1/2 Cup pumpkin puree
1 Cup cottage cheese (low-fat)

Instructions
Mix dry ingredients, then add remaining ingredients. Using a small ice cream/cookie scoop place 3 scoops in the center of a hot waffle iron. Cook for 2 1/2 minutes.
