Mix flour, sugar and baking powder in a mixing bowl first. add coconut milk slowly to dry ingredients mixing until it forms a dough. Add more flour if needed.
mix remaining sugar and cinnamon in a seperate bowl and set aside

Heat 2 cups canola oil in a deep sauce pan on medium heat.
Put flour down on board and roll dough out into a square about 1 inch thick cut cut into long strips 1 inch width then cut strips into triangles.
then start frying as many as you can until golden to dark brown. remove and drip on paper towel or strainer. let cool.

dip doughnuts in sugar/cinnamon mix coating doughnut completely. Do this until all doughnuts are done.
