Wash and dry tomatoes - halve if large - place in oven proof dish
Drizzle tomatoes with the oil. Add salt, pepper and thyme (or basil)
Bake in preheated oven (200c) for 20 minutes, turning after 10 minutes, add cheese (if used for final 5 minutes.
Allow tomatoes to cool slightly before serving.
