Sprinkle shrimp with salt and pepper and cook about 3
minutes. Transfer to plate.
Heat the oil in same skillet over medium heat . Add zucchini,
onion,and garlic cook stirring occasionally until veggies are
tender. Stir in tomatoes,water,and olives bring to boil. Stir in
shrimp and rice medley, reduce heat and simmer about 2
minutes longer. Stir in cilantro.
