     Leek and Asparagus Soup

Ingredients
2 tbs unsalted butter
2 tbs canola oil
2 1/2 lbs leeks - halved lengthwise and cross cut into 1/4 inch slices
1 tsp minced fresh thyme
5 cups water
1 small russet potato peeled and cut into large dices
2 lbs asparagus
1 cup packed baby spinich leaves
1 cup half and half
 
Kosher salt to taste
pepper to taste
Spring oil dipping oil

Instructions
Melt 1 tsp butter in a pot over medium heat and 1 tsp of oil. Reserve a cup of leeks and add the rest to the pot along with the thyme. Reduce the heat to low, cover and cook, stirring occationally, until the leeks are siftened, about 10 minutes. Add broth and potato, increase the heat to medium high, cover and bring to a boil. Reduce heat to medium low and simmer until potato is tender, about 10 minutes. Add the asparaus, cover and cook until the asparagus is bright green and just tender, 4 to 6 minutes. Stir in spinach and cook until wiltede, about 45 seconds.
Puree soup in a blender until smooth. Add half and half, season with salt and pepper and stir to blend. Keep the soup warm over low heat.
In a frying pan over medium heat melt the remaining butter with remaining oil. Add reserved leeks and the 1/4 tsp salt and saute until the leeks, about 8 minutes. Transfer the leeks to a paper towel-lined plate.
Ladle into soup bowls garnish with fried leeks and drizzle with spring onion dripping oil.
