     Chunky date bran muffins

Ingredients
3 cups natural bran
1 1/2 cups flour or mix white and wholewheat
1/3 cup wheat germ
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cup chopped dates
1 cup chopped walnuts
Grated rind of one large orange
 
1/2 cup vegetable oil
1/2 cup molasses
1/3 cup brown sugar
2 1/2 cups buttermilk

Instructions
Comine bran, flour, baking powder, baking soda, and wheat germ, and salt. Mix in dates, nuts and orange rind. In a large mixing bowl, beat oil, molasses and brown sugar until well blended. Stir in buttermilk.
Add fruit flour mixture, stirring quickly but thoroughly with a wooden spoon until moistened. Do not beat or over mix.
Line 18 muffin tins with paper cups or grease. Fill muffin tins. Bake in a preheated 400 degree oven for 20 - 25 minutes.
I found this recipe in the cooking section of a newspaper at a time when there were muffin shops everywhere in Vancouver. Unfortunately, the muffins tasted more like cake than good healthy, breakfast muffins so I decided to give this recipe a try. The muffin shops have faded away, but this recipe has endured and I know they have always been a favourite of Marjorie's and have no eggs.
