     TOFU Quiche

Ingredients
14 oz. FIRM tofu
1 Tbls. olive oil
1/2 small onion, chopped
2 garlic cloves, minced
3-4 Cups fresh spinach (or 10 oz. frozen, thawed)
3 medium tomatoes (I used 1/4 C. sun-dried)
Other cut vegis as desired (I used a bell pepper)
1 tsp. salt (mediterranian sea salt is best)
1/4 C mozz cheese (I used KAAS soy-cheese, melts great)
 
9-inch pie crust (I made mine crustless)

Instructions
Puree tofu in a food processor or blender to creamy.
In a large saucepan, saute the onion and garlic over medium heat (add other vegis as necessary). Heat for 5 minutes.
Stir in the spinach and tomatoes, and simmer for 2-3 minutes. Remove from heat. (Drain any excess liquids)
Add the tofu and salt to the mixture. Stir well. Pour the mixture into the pie crust of pie pan. Sprinkle the cheese on top and bake at 350 for 35 minutes, until browned. Serve HOT!
