     Medifast - Scrambled Eggs Provencal

Ingredients
1 Medifast Scrambled Eggs
½ cup tomatoes, diced
¼ cup EggBeaters
¼ cup mushrooms, chopped
¼ cup spinach, chopped
1 teaspoon garlic, minced
½ teaspoon oregano
Dash of basil
Non stick cooking spray
 

Instructions
Combine Scrambled Eggs packet and water in a medium bowl and mix thoroughly. Add EggBeaters, mix, and set aside. Combine tomatoes, garlic, oregano, and basil in a small bowl. Coat a skillet with non stick cooking spray. Saute mushrooms and green peppers until tender. Add tomatoes. When tomatoes start to cook, add egg mixture and scramble until fully cooked.
Serving Suggestions
1 MF meal, 1/8 lean protein, 2 vegetables, 2 condiments
