     Tuna Casserole

Ingredients
2 potatoes, peeled and cubed
4 carrots, peeled and cubed
1/4 cup butter
1/2 small onion, chopped
2 cloves garlic, crushed
3 tbs flour
3 cups milk
2 cans tuna, drained
1/4 cup butter, melted
 
1 sleeve buttery round crackers, crushed

Instructions
1. Boil potatoes and carrots in large pot and cover with salted water then reduce heat to medium-low, cover and simmer about 15 minutes then drain
2. Preheat oven to 350 and spray a baking dish..... Melt butter over medium heat and stir in onions and garlic, cook and stir about 3 minutes..... Sprinkle in flour and reduce heat to medium-low, whisk out lumps
3. Whisk in milk about 5-7 minutes, flake tuna then stir into the white sauce along with the potatoes and carrots, season with salt and pepper..... Transfer mixture to baking dish and top with cracker and butter mixture
4. Bake about 30 minutes
