1. Heat waffle iron
2. Mix flour, baking POWDER, sugar & salt in a medium bowl. Stir in milk, melted butter & egg yolk until blended.
3. Beat egg white in small bowl on high speed until stiff peaks form; fold flour mixture into egg white.
4. Lightly spray hot waffle iron with cooking spray (i.e. Pam). Pour about 2/3 C. of the batter onto center of hot waffle iron. Bake until steaming stops.
5. Remove waffle carefully. Repeat with remaining batter.

Suggestions
Top with your choice of fresh fruit (strawberries, blueberries, blackberries, bananas) or jam.
