Ingredients
2 1/2 cups all-purpose flour
9 teaspoons salt
1 teaspoon sugar
1 cup chilled unsalted butter, cut into small pieces
4 to 6 tablespoons ice water
 

Instructions
In bowl of a food processor fitted with metal blade, process to combine flour, salt and sugar. And butter; process until mixture resembles coarse meal, 8 to 10 seconds. Add 4 tablespoons ice water; pulse just until dough holds together without becoming wet or sticky - no longer than 30 seconds. Pinch off a piece of dough, if it is curmbly, add water - 1 tablespoon at a time. Divide dough in half; flatten into 2 even dishes and wrap in plastic. Chill at least 1 hour before use. --Can be kept in the fridge up to 1 week or one month in freezer.
