Break woody ends off asparagus. Fill a saucepan with water and bring to the boil. Place asparagus in a single layer in the boiling water and simmer for 3 to 4 minutes.

Remove from the heat and stand asparagus, covered for 5 minutes. Drain.
|
|
|
Scrub potatoes amd cook in boiling, salted water for 15 minutes or until tender. Drain.
|
|
|
Shell eggs and cut into quarters. Arrange potatoes, asparagus and eggs on a serving platter and drizzle with lemon dressing.
