Turn oven to 200 degrees C. Scrub potatoes under cold water, removing any damaged areas. Cut in half lengthways. Cut each half into three pieces lengthways.

Place cornflour and cajun seasoning in a plastic bag and shake to combine. Add half of the wedges and shake to coat wedges in cajun/cornflour mixture.

|
Pour oil into a baking dish. Heat and add coated wedges. Shake remaining wedges in cajun/cornflour mixture and add to the oil. Spread all wedges out to a single layer.

|
Bake for 30 to 40 minutes, turning often after 15 minutes. Serve with your favourite dipping sauce.
