     Lemon Aioli

Ingredients
2 Egg Yolks
2 cloves Garlic
1/2 cup Extra Virgin Olive Oil
3 teaspoons Lemon Juice
1 teaspoon grated Lemon Rind
Salt
Freshly Ground Black Pepper
2 tablespoons chopped Parsley
 

Instructions
Place egg yolks in a food processor or blender.
Crush garlic, peel and chop finely. With the motor running, slowly add the oil into the food processor or blender until a thick mayonnaise consistency.
Stir in garlic, lemon juice, lemon rind, salt, pepper and parsley.
Serving Suggestions
Serve on top of Smoked Fish with Roasted Potato Cubes (see recipe)
