     MEAT LOAF

Ingredients
2 pounds ground beef (or beef & sausage)
3/4 cup rolled oats
1/4 cup onion, fresh or dried
1 1/2 teas salt
1/4 teas black pepper
1 cup tomato juice - see note
1 egg, beaten
1/4 cup green pepper, finely chopped
1 teas ground mustard (you can subs reg)
 
optional-- 1 tablespoon horseradish (I don't use)
Note - I usually use half an 8 oz can of tomato sauce
and add water to one cup. Use the other half of
sauce mixed with honey (or whatever sweetener you
like to baste top of loaf when nearly done.

Instructions
Mix everything together well. Put in loaf pan and bake 1 hour at 350. If you are trying to eliminate fat is is best to bake on little rack inside baking pan but it will be drier baked that way. You can put more sauce or a low fat cream soup on each serving.
