     Cubed Daikon Radish Kimchi

Ingredients
2 lbs daikon radish (about 2 lrg) sliced into 1 in cubes ( wash and chop leaves if desired)
2 tblsp coarse sea salt
1/2 c kimchi sauce
4 gr onions sliced into 1 in lengths
1 sm apple peeled cored and grated
 

Instructions
place daikon cubes in lrg bowl sprinkle with salt and set aside at room temp for 2 hrs to wilt
drain any liquid and place the cubes in dry bowl. add the kimchi sauce. add gr onion and apple mix well
place in 1 qrt glass jar close tightly. leave for one day at room temp to pickle.
will keep up to 2 weeks in fridge
