Caramel Frosting- Melt 2 Tbsp. butter. Add 3
Tbsp. milk or cream, and 1/2 C. brown sugar. Boil
vigorously for 1 min. Remove from heat. Add 1/2
C. confectioners sugar and beat well. Cool
slightly. Add 1/2 tsp. vanilla, 1/2 C.
confectioners sugar, beat well. If too thick, add
more milk. Frosts one 8 or 9-inch layer cake.
