3/4 lb. ground beef (chicken or turkey or 1 pkg. turkey sausage crumbles)
2 tsp. olive oil
1/2 cup reduced fat mozzerella cheese
1 cup jar or homemade spaghetti sauce
Instructions
Preheat oven 375 degrees. Wash zucchini, slice lengthwise and place flat side down on plate and microwave until tender-crisp. Meanwhile, heat olive oil in a large skillet. Saute garlic, then add onions, green and red peppers, thyme and oregano. When veggies begin to soften, add ground meat, season with salt and pepper and brown until cooked through. Drain off any excess grease. Set aside to cool slightly.
When zucchini have cooked, set aside and let cool enough to handle. Scoop out center, leaving veggie flesh to form a boat.
Mix meat and veggie mixture and the scooped out filling (chopped). Fill the zucchini boats with the mixture, spoon spahetti sauce over mixture, top each with cheese. Bake 375 degree for 30 mins, until heated through, and cheese begins to bubble and brown. Serve hot.
