Slice onions, mince garlic and trip as much fat off prosciutto as you can. Cut the proscuitto into about 3/4 inch squares....no need to be perfect. Bring a pot of water to a boil and start your pasta cooking. Add a little salt.

Continually stir during this process. In a pan about 4 inches deep pur the olive oil. Oil should cover the bottom of pan. Heat the oil and sautee the onions until they are just about carmelized. Add minced garlic and peas. Season with black pepper...liberally. Add the prosciutto and cook for another 3-4 mins. Add some Romano cheese.

Drain pasta and add to the pan with all the goodies and add more romano cheese. Uncle John now turns up the heat on the pan and stir all the ingredients together for about 3-4 minutes. It is now ready to serve directly from the pan.

Now if you are Italian you are going to accompany this meal with some white wine and Italian bread to soak up the marinated oil left on your plate....and in the pan!!!! ENJOY, GIOVANNI
