Sift flour, salt, sugar and baking powder in mixing bowl. Cut in butter and add flavoring and egg. Do not knead on board. Leave in bowl covered with plastic wrap.
To make drop cookies, fill one rounded tsp and drop on greased cookie sheet. Bake at 375 degrees for 10 - 12 minutes, or as your oven bakes. Cool and frost.
This same recipe dough can also be used for filled cookies. Using same dough, pull out as much dough as you want to work with and place on floured board. Knead dough - not too hard or sticky. Just soft enough to handle. Roll out to 1/4 in place filling on dough as you wish to shape your cookies. Like ravioli shape. Fold over top and seal around cookie by pressing with fork.
Any filling is ok, like ricotta with raisins or grape-chocolate-nut.
