Cranberry Orange Brussels Sprouts with Walnuts

Bag of brussels sprouts, halved.
|
|
Bag of cranberries
|
|
2 Tbsp. olive oil
|
|
3/4 cup walnuts, toasted
|
|
Zest of one orange
|
|
1 Tbsp. orange juice
|
|
1 Tbsp. balsamic vinegar
|
|
1 Tbsp. olive oil
|
|
1/2 tsp. salt
|
|
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|

|
|
|

|
|

Instructions |
|
|
Heat the oven to 375. Cut sprouts in half. Rinse and drain
cranberries, add to bowl with sprouts.
|
|
|
Toss in olive oil and pinch of salt. Spread on baking sheet and pop
in oven to roast for 40 minutes.
|
|
|
Put walnuts in a bowl for last 5-10 minutes. Watch to make sure
they don't burn. Toss everything together, grate orange over the
top.
|
|
|
Whisk together 1 Tbsp. olive oil, OJ and balsamic. Pour over mix.
