Preheat oven to 350 degrees. Cut out stem and seeds of bell pepper, clean and dry. Cut of small amount of top and bottom of pepper to make stand upright.
Chop bell pepper that was just cut from the top and bottom and mix in with all ingredients except for small amount of cheese for top. Place stuffed peppers in well greased shallow baking dish.
Bake for 10-15 minutes, until pepper is tender and stuffing is heated through. Place remaining cheese on top and put back in oven for 5 more minutes or until cheese is melted.
