     Cold Pasta Salad

Ingredients
1lb fresh fettucini
1 large red pepper, finely chopped
2 cups fresh broccoli flourets
1lb mozzarella, cubed
1/2 cup toasted pine nuts
Vinaigrette -- combine
3 tbsp. dijon mustard
3 tbsp. lemon juice
 
4 cloves garlic, finely minced
then add 1/2 cup olive oil slowly while whisking

Instructions
Blanche peppers and broccoli, separately.
Marinate cooked pasta in half of the vinaigrette overnight.
Toss pasta with vegetables and remaining vinaigrette. Add cheese and nuts closer to serving time.
