     Muffins (Chocolate Chip or Blueberry)

Ingredients
1 3/4 cups flour
1/2 cup white sugar
3 tsp baking powder
1/2 tsp salt
1 cup blueberries or chocolate chips
1/2 cup (1 stick) unsalted butter, melted
1 cup milk
1 egg
flaxmeal (I added for extra nutritional value)
 

Instructions
In a large bowl combine all the dry ingredients and the (blueberries or chocolate chips). In a small bowl combine the melted butter, milk and egg. Add wet ingredients to dry ingredients and mix gently until just combined. As a rule you should never beat muffin batter so you will have light and fluffy muffins. Fill muffin tins 3/4 full and bake at 350 degrees F for 15-20 minutes. For an extra treat melt about 2 Tbsp of butter; dip the tops of the muffins in the butter and then into some white sugar to make the muffins sparkle.
I took the base for this recipe and decided to make chocolate chip muffins in addition to blueberry muffins as a treat.
Serving Suggestions
Makes 12, however I make these in a cupcake pan so they are smaller and it usually yields about 18-24
