Mix dry Ingredients. Beat together sugar, eggs and oil. Fold
dry ingredients into liquid mixture. Add carrots. Cook in 3
cake pans. Bake at 350 for 25-30 min.
Mix ingredients for icing . Let cake cool a little and put on
icing.

I double the icing recipe. I think it needs more icing. A great carrot cake.
