     Almond-Crusted Tilapia

Ingredients
6 Tilapia Filets
1 cup whole plain almonds
1/2 cup shredded parmesean chese
3 sprigs fresh rosemary
Salt & Pepper to taste
Juice from 1 lemon
2-4 Tablespoons melted butter
 

Instructions
Preheat the oven to 425 degrees. In a food processor combine almonds, cheese, rosemary, and salt & pepper - process until a crumb-like mixture is created. Put crumb-like mixture into a bowl that can be used to help coat the Tilapia. Place 1-2 Tablespoons of melted butter on the bottom of your baking dish. Start coating the Tilapia by placing it in the bowl and then patting the mixture onto the filet - repeat on the other side of the filet as well. Place the coated filet into the butter coated baking dish. Repeat this process of coating with the remaining Tilapia filets. If you have left over mixture you can freeze it to use for another meal of almond-crusted tilapia or chicken. Using a spoon drizzle fresh squeezed lemon juice over each filet. Using the same technique drizzle melted butter over each filet. Bake at 425 for approximately 15 minutes.
I like cooking it at a higher temperature (1) because I usually make a roasted vegetable side to go with this meal; and (2) cooking it at a higher temperature helps make brown more and to me adds a better flavor! Its ok to keep cooking the fish if you're still roasting vegetables. I have never had any problems cooking it longer.
