Preheat over to 350 degrees. Place tilapia filets
in a greased baking dish, sprinkle with salt &
pepper, and cover with slices from 1 lime. Bake
for 10-15 minutes.
While fish cooks, mix chopped cilantro, juice from
one lime, avocado, sour cream, and salt & pepper
in a food processor. chill until ready for dinner.
Cook Quinoa and Black Beans according to packaged
instructions. Keep warm until fish is ready.
Once the Tilapia is done pull it apart using 2
forks.
Put fish, sour cream sauce, Quinoa, and black
beans into tortilla and enjoy! You can fry the
corn tortillas if you would like.
