In a blender or food processor, blend chipotle peppers in adobo sauce with 1 Tablespoons water until smooth. Remove 2 Tablespoons for recipe, scrape the rest into a small zip lock bag and freeze for next time.
In a large bowl, mix beef, chipotle sauce, onion and bread crumbs. Form into 6 patties. Grill, broil or fry patties to desited doneness.
Serve on grilled, buttered buns with your favorite condaments.
