Cut tomato and onion into small pieces. Place in a bowl and add 1-2 crushed garlic cloves and 1 teaspoon of parsley. Add 2 tablespoons of olive oil and a pinch of salt. Mix well and let sit for 5-10 minutes. Cut bread into 3 inch slices (diagonally). Brush with olive oil.
Add tomato mixture and add a thin slice of cheese. Place on a cookie sheet in a preheated 300°F oven until the cheese is melted. (7 minutes)
