     Potato Salad

Ingredients
3 lbs. red potatoes
1/2 onion
3/4 teaspoon sugar
3 tablespoons olive oil
2 tablespoons apple cider vinegar
salt and pepper, to taste
5 wooden spoons of mayo
2 tablespoons fresh parsley
 

Instructions
Boil potatoes with skins on (once water is boiling, about 15 minutes). Drain well under cold water then peel.
While potatoes are boiling, run onion through a food processor to liquify, about 2 tablespoons. Add sugar and let sit for 15 minutes.
To onion mixture add olive oil, apple cider vinegar, salt, pepper, and mayo. Mix all together.
Add parsley. Cut potatoes into mixture, stir periodically while adding potatoes.
