3 lbs. red potatoes
|
|
1/2 onion
|
|
3/4 teaspoon sugar
|
|
3 tablespoons olive oil
|
|
2 tablespoons apple cider vinegar
|
|
salt and pepper, to taste
|
|
5 wooden spoons of mayo
|
|
2 tablespoons fresh parsley
|
|

Instructions |

|
Boil potatoes with skins on (once water is boiling, about 15
minutes).
Drain well under cold water then peel.
|

|
While potatoes are boiling, run onion through a food
processor to liquify, about 2 tablespoons.
Add sugar and let sit for 15 minutes.
|

|
To onion mixture add olive oil, apple cider vinegar, salt,
pepper, and mayo.
Mix all together.
|
|
|
Add parsley.
Cut potatoes into mixture, stir periodically while adding
potatoes.
