     Mango Black Bean and Tomato Salad

Ingredients
1 large mango, pitted and flesh diced
2 limes, juiced
1/4 cup olive oil
1/2 teaspoon ground cumin
1 15 oz. canned black beans, drained and rinsed
1 cup cooked long- grain rice, cooled
1 cup cherry tomato, sliced in 1/2
1/2 small red onion, finely chopped
1/4 cup chopped fresh cilantro leaves
 
1/2 jalapeno, seeded and finely chopped
pinch salt and ground black pepper

Instructions
Mix all ingredients together
Cover and refrigerate for 1 hour
