In large mixing bowl, combine flour (half the amount) and rest of ingredients except for 1/4 cup of sugar. Beat with electric mixer on medium to high speed til combined.
Beat in remaining flour. Shape into 2 inch balls. I use the Pampered Chef Medium Cookie scoop. Roll balls in sugar and place on cookie sheet 2 inches apart.
Bake in 375 degree oven for 8 to 10 minutes or til edges are set and tops are cracked. Let cool on cookie sheet for 1 minute before transferring to wire rack.
