     Crock Pot Chicken Tortilla Soup

Ingredients
frozen chicken (breasts or thighs), about 4
2 cups broth
1 can rotel
1 can diced tomatoes and green chilis
1 onion, chopped
4 oz tomato paste
2 cans black beans
1 can corn
1 jalapeno pepper, minced (seeds and ribs removed)
 
cilantro
green onion
1 zucchini, chopped
sour cream, salsa, guacamole, tortilla chips, shredded cheese (optional)

Instructions
put onion in bottom of crock pot and layer frozen chicken on top. Add rotel, canned tomatoes, jalapeno, zucchini, tomato paste, and broth. Cook on low 6-8 hours.
Remove chicken and shredded meat, returing to crock pot. Add beans and corn. Cook additional 20-30 minutes. Stir in cilantro.
Ladle soup into bowls or mugs. Top with green onion and whatever additional toppings you like (salsa, sour cream, guacamole). Serve with tortilla chips.
