     Bran Flake Pumpkin Muffins

Ingredients
1 and 1/2 cups flour
1 T. Baking Powder
1 tsp. Cinnamon
2 cups Bran Flakes
1/3 cup Skim Milk
1/4 cup oil
1/2 cup sugar
1/4 tsp. salt
1/2 tsp. nutmeg
 
1 cup Pumpkin
2 Egg Whites
1/2 cup raisins or butterscotch chips opt

Instructions
Stir together flour, sugar, baking powder, salt - spices. Set aside. In a large mixing bowl, combine bran flakes, pumpkin - milk. Let stand 2 minutes. Add egg whites - oil. Beat well. Add raisins. Stir well. Mix flour mixture, stirring only until combined. Fill 12 muffin cups coated with Pam. Bake at 400 F for 20 minutes. Serve warm. I prefer butterscotch chips instead of the raisins.
