     Carrot Buns

Ingredients
3 T. yeast
1 cup water
3 tsp. sugar
1 cup vegetable oil
4 tsp. salt
4 cups cooked mashed carrots
4 eggs
2 T. molasses
6 to7 cups flour
 

Instructions
Cook carrots and finely chop in blender. Cool. Mix the first 3 ingredients. Let rise. Mix the next 5 ingredients. Start adding flour to make a medium soft dough. Let rise until doubled in bulk. Make buns and let rise until doubled. Be careful not to let rise too high. They will rise more in the oven. Bake at 350 F for 15 to 20 minutes. NOTE- Nicer if buns are made fairly big.
