Preheat oven to 425 degrees. Spray a large rimmed baking sheet with cooking spray. Toss sweet potatoes wedges with olive oil and sprinkle with paprika. Arrange on baking sheet. Roast potatoes until tender approximately 30 mins, depending on
the thickness of the wedges.
