     Lentil Pilaf

Ingredients
1 cup lentils sorted and rinsed (WIC food)
3/4 cup rice (WIC food)
1 bunch green onions, chopped (WIC food)
1-2 cloves of garlic, minced
2 Tbsp margarine
2 3/4 cup chicken broth
1/2 tsp thyme
1/2 tsp salt
1/8 tsp pepper
 

Instructions
Saute lentils, rice, onion and garlic in the margarine until the onion is tender (about 3-4 minutes). Add the rest of the ingredients, bring to a boil. Reduce heat, cover, simmer 30 minutes or until all the water is absorbed.
