2 ponds potatoes (unpeeled, washed & cut into chunks.)
1/2 cup ranch dressing.
1/4 cup shredded cheddar cheese (plus more for topping.)
1/4 cup crumbled, cooked bacon.
1 tablespoon dried dill.
3 scallions, washed & chopped.
salt & ground pepper to taste.
Instructions
preheat oven to 350 degrees. in a large bowl, mix
together the ranch dressing, dill, cheese & bacon.
add potatoes to mixture. sprinkle in salt & pepper.
toss to coat potatoes. spoon into a 9 x 13 baking
dish. cover with foil & bake for 60 minutes.
gently stir potatoes halfway through cooking time
to ensure even cooking. remove foil. raise oven
temperature to 400 degrees. stir potatoes again &
cook for an additional 15 minutes.
sprinkle extra cheese on top of the potatoes &
return it to the oven until cheese is melted. serve
with scallions sprinkled on top for a garnish.
