Combine the first 7 ingredients in a medium bowl
with lid, stirring to coat chicken. Cover mixture,
and marinate in refrigerator 30 minutes.
Heat 1 t. oil in a large nonstick skillet over
medium-high heat. Add chicken; cook 8 minutes or
until done. Remove chicken from skillet; keep
warm. Add 1 t. oil to skillet; place over medium-
high heat until hot. Add carrot and green onions;
sauté for 10 minutes or until browned. Stir in
cilantro leaves.
Place chicken, carrots & onions, tomato-curry
yogurt, and brown rice (if using) in bowls for
people to fix their tortillas up.
Tomato-Curry yogurt
1 c. plain yogurt
½ c. tomato sauce
¾ t. curry powder
¼ t. sugar
1/8 t. pepper
Mix ingredients in small bowl with lid. Chill.
