     Banana-Nut Chocolate Chip Muffins

Ingredients
2 cups whole wheat flour
1 t. baking soda
½ t. salt
1 T. ground flax or wheat germ
1/3 cup olive oil
½ cup honey
2 eggs
1 t. rum
1 cup mashed ripe bananas (about 2 medium)
 
¼ cup hot water
¼ cup chocolate chips (mini are best)
½ cup walnuts, chopped

Instructions
Preheat oven to 350 degrees.
Whisk dry ingredients; flour, baking soda, salt, and ground flax or wheat germ in a bowl.
Whisk wet ingredients together; olive oil, honey, eggs, and rum in a separate bowl. Add mashed bananas to wet ingredients and 1/4 cup of hot water when you slowly mix the dry and wet ingredients together.
Fold chocolate chips and walnuts into the batter. Bake in muffin tins lined with paper for 20 minutes or until muffins spring back and test done with a toothpick.
