Preheat oven to 325 degrees. Grease and flour 2 9-inch cake pans OR 2 8-inch cake pans plus 6 muffin cups.

Sift together dry ingredients into a large mixing bowl. Add hot coffee, oil and milk. Mix at medium speed 2 minutes. Add eggs and vanilla. Beat 2 more minutes. Batter will be thin. Pour into prepared pans.

Bake 25-30 minutes. Cool 15 minutes then remove cake from pans. Cool completely.

|
Frost with icing. Buttercream or french frostings both work well, but you can choose whatever you like.
